This is my dads favorite potato salad. My mom passed away many years ago but I have her recipe and my dad goes crazy over it when I make it for him

Ingredients For mom's creamy potato salad

6 lgrusset potatoes peeled and small cube

1 lgonion chopped

1 cpickle slices chopped

6 lgboiled eggs 4 chopped 1 sliced
- DRESSING

2 cmiracle whip
-
2 Tbspprepared mustard

2 tspcelery seed

1 tspsalt

1 tspblack pepper

1 tspapple cider vinegar
-
1 csugar
-
1 1/2 cmilk

2 tspsweet paprika
-
2 Tbspfresh parsley for garnish
How To Make mom's creamy potato salad

1boil the potatoes in salted water until soft. About 15 minutes. Place the onion, pickles and chopped egg in a large bowl. Drain the potatoes and rinse with cold water until cooled and add to bowl.

2Mix all the ingredients for the dressing together except paprika and parsley.Whisk until well incorporated.

3Stir the dressing into the potato mixture. Add the sliced boiled egg to top of dish. Sprinkle with paprika and garnish with fresh parsley.
