kippered salmon and potato salad

I love both potato salad and salmon. This sounded like a winner! Can't find kippered salmon? Try using smoked salmon just don't use lox (it's cold-cured and not the right consistency).

Ingredients For kippered salmon and potato salad

    new red potatoes, boiled, roughly peeled and sliced
  • 4
    eggs, hard boiled and quartered
  • 1/2 lb
    kippered salmon, broken into pieces
  • watercress or frisee lettuce
  • DRESSING
  • 1/2 c
    sour cream (lite is ok)
  • 1 tsp
    grainy mustard
  • 2 Tbsp
    fresh lemon juice
  • 1/2 c
    chopped fresh dill
  • 1 Tbsp
    prepared horseradish
  • black pepper to taste

How To Make kippered salmon and potato salad
