I come from a large family and whenever we have a family get-together Im the one they pick to bring the potato salad and being from the South it is a staple here.

Ingredients For judy's potato salad

  • 3 lb
    white all purpose potatoes peeled and diced
  • 1 md
    onion ,diced small
  • 2 stick
    celery clean and chopped small
  • 1/4 c
    green and red pepper diced
  • 1/2 c
    sweet pickle relish
  • 1 sm
    jar of chopped pimento
  • 1 c
    hellmans mayannaise (my choice)
  • 1/8 c
    yellow mustard
  • 1/4 c
    sugar or splenda
  • 1/8 tsp
    black pepper
  • 1 tsp
    salt
  • 2 lg
    hard boiled eggs,chopped

How To Make judy's potato salad

  • 1
    Cook potaotes until tender.Add vegetables and pimento and pickles. Add eggs and salt and pepper.

    Mix mayannaise and mustart and sugar in small bowl with a wisk and pour over the potato mixture. this is good warm or even better cold.
