Sweet Potato Salad sounded interesting so I tried it. We thought it was pretty good. I made some changes to the original recipe and it is always well received at pot-lucks. In fact I just finished a batch for a pot-luck this evening.

Ingredients For j's sweet potato salad

4 smsweet potatoes

1/4 cmayonnaise

1 Tbspmustard

4celery stalks, chopped

1 mdbell pepper, chopped

1 cfresh pineapple, chopped

3green onions, chopped fine
-
salt and pepper
-
1/2 ccoarsely chopped toasted pecans

1/2 cgolden raisins
-
chopped fresh chives
How To Make j's sweet potato salad

1Preheat oven to 400°F. Wrap each sweet potato in foil and bake for 1 hour. Unwrap; let cool. Peel; cut into 3/4-inch chunks.

2In a large bowl, mix mayonnaise and mustard. Add sweet potatoes, celery, red pepper, pineapple, and scallions; toss gently. Season to taste with salt and pepper. Cover and refrigerate about 1 hour.

3Fold in pecans and raisins and sprinkle with chives.
