This is my most requested summer side dish.it's ideal for outdoor occasions and can be served warm or cold.

Ingredients For grilled greek potato salad

  • 3 lb
    small red potatoes,halved
  • 2 tbsp
    olive oil
  • 1/2 tsp
    salt / 1/4-tsp pepper
  • 1 lag
    sweet yellow pepper,chopped
  • 1 med
    red onion,halved,sliced
  • 1 med
    cuccumber,chopped
  • 1 1/4 cups
    grape tomatoes,halved
  • 1/2 lb
    mozzarella cheese.cubed
  • 3/4 cup
    greek vinaigrette
  • 1/2 cup
    kalamata (greek) olives
  • 1 can
    2- 1/4 oz sliced ripe olives,drained
  • 2 tbsp
    minced fresh oregano

How To Make grilled greek potato salad

  • 1
    DRIZZLE POTATOES WITH OIL AND SPRINKLE WITH SALT AND PEPPER;TOSS TO COAT.GRILL POTATOES,COVERED,OVER MED HEAT FOR 20-25 MIN OR UNTIL TENDER.

    PLACE IN A LARGE BOWL.ADD THE REMAINING INGREDIENTS;TOSS TO COAT. SERVE SALAD WARM OR COLD.
