This is passed down from my dad, James Hardy Park. Lucky for me he showed me a few of his secrets. I miss him so much... Enjoy this, it's just darn good! I'm so sorry, I didn't time myself for the cooking and prep time :( Doesn't take that long to do.

Ingredients For green olive creamy potato salad

9 ccooked and cubed potatoes with the skin on.

8 lghard boiled eggs

1 lgyellow onion, diced

1 creal mayonaise
-
1/8 cyellow mustard
-
1/4 colive juice (from your olive jar)

1/2 cchopped green olives
-
1 Tbspcelery seed (you can also chop up celery in here, i didn't have any available)

salt and pepper to taste
How To Make green olive creamy potato salad

1Boil and drain your potatoes then place in a large mixing bowl.

2start adding your ingredients. Be very careful not to over mix. You may get mashed potatoes! Fold in Yellow onion

3mayo, eggs

4celery seed, olive juice and olives.
