greek potato salad with feta cheese
I have this easy potato salad and have been making it for the past 40 years. I found it in a Gourmet magazine I was subscribed to back then. Hope you enjoy.

Ingredients For greek potato salad with feta cheese

1 1/2 lbpotatoes, quartered lengthwise & cut into bite size

1/2 cfresh lemon juice
-
1red bell pepper, roasted & diced
-
1/2 cpitted black olives
-
3scallions, minced
-
1 Tbspfeta cheese mashed with a fork
-
3/4 tspdried oregano
-
1/2 colive oil
-
salt & pepper
How To Make greek potato salad with feta cheese

1Peel & cut potatoes in large bite size pieces. Boil for about 10 minutes or just tender. Drain and transfer them to a large bowl.

2Toss the potatoes with 2 Tbsp of lemon juice and salt to taste. Let them cool and then add the red pepper, the olives and the scallions.

3In a jar pour in the remaining 2 Tbsp lemon juice, the oregano, the feta cheese and the olive oil. Shake well until dressing is emulsified.

4Pour the dressing over the salad, toss and season it with salt & pepper. The potato salad keeps, covered and chilled, overnight. Serve the potato salad at room temperature. KALI OREXI: ENJOY!
