This is my granddaughter's new potato salad. She invented this for us and it was a hit. Please give this a try because it is so good.

Ingredients For granddaughter's new potato salad

  • 1 1/2 lb
    new potatoes
  • 1 pt
    mushrooms, fresh
  • 1 pt
    cherry tomatoes
  • 1 lg
    bell pepper, any color, we use yellow for color
  • 1 bunch
    green onions
  • 1 1/4 c
    shredded colby and cheddar cheese
  • 2 Tbsp
    olive oil
  • 1 tsp
    rosemary
  • 1/2 c
    miracle whip
  • 1/2 c
    sour cream
  • 1 dash
    salt and pepper to taste

How To Make granddaughter's new potato salad

  • 1
    Take potatoes, Wash and quarter them in fours. Oil them with olive oil and Rosemary, lay them on cookies sheet and roast them at 375 degrees until tender. When cool add chopped mushrooms, Halved cherry tomatoes, chopped bell pepper and chopped green onions. Mix with sour cream and miracle whip. Add Cheese and stir in. Add salt and pepper to taste. let cool and serve.
