This a favorite in my family. Please understand I am guessing on the time line for prep and cooking. I always take less then an hour , but I really never pay attention to how much time the steps take. A simple easy recipe to put together and comfort food at it's finest.

Ingredients For german potato salad

  • 6 slice
    bacon
  • 1/2 c
    onion chopped
  • 4 Tbsp
    sugar
  • 2 Tbsp
    flour
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 c
    water
  • 1/3 c
    vinegar
  • 4 c
    cooked chopped potatoes
  • fresh parsley

How To Make german potato salad

    In a large skillet fry bacon until crisp

    remove bacon , saute onions in pan drippings until crisp tender.

    Add sugar, flour and salt & pepper, blend and cook until the mixture is smooth and bubbly , stirring constantly.

    carefully add water and vinegar stirring as you add to keep the sauce smooth. Cook on medium high heat until sauce boils, lower the heat to medium and cook to thicken.

    Stir potatoes into the pan, mix well to coat the potatoes, heat on medium low heat until heated through.

    Crumble the cooked bacon and stir half of it into the potatoes.

    Spoon into serving dish and top with remaining bacon and parsley.
