dad's potato salad

I call this Dad's Potato Salad because my FIL made the "best" potato salad. He taught me how to make it. Everyone in the family says that mine tastes just like his!(I say it's close, but not exact!) We lost him about a year ago, miss him terribly. Hope you enjoy this!

Ingredients For dad's potato salad

  • 6 md
    russet potatoes, peeled & diced (1 inch cubes)
  • 5
    extra large eggs
  • 3 stalk
    celery, diced
  • 1 md
    onion, diced
  • 1-1/2 c
    mayo, hellmans is a must!
  • 1 Tbsp
    garlic salt
  • 1 -1/2 tsp
    black pepper
  • 1 tsp
    celery salt
  • 1 tsp
    dry mustard

How To Make dad's potato salad

    Fill a large pot potatoes & eggs & cover with water, about an inch over the top. Boil on med-high heat for approximately 20 min.( Check softness of potatoes, just want to be able to pierce with a fork)

    Drain. ( I like to cool my potatoes if I have time) Remove eggs, peel & dice.

    In a large bowl, gently all ingredients until well mixed. Cover & refrigerate at least 4 hours. The longer the better! Enjoy!
