This is one of my mother's favorite salads. For maximum color, use multiple colors of bell pepper.

Ingredients For confetti spaghetti

  • 1 lb
    spaghetti noodles
  • 1 md
    red onion, chopped
  • 1
    bell pepper, chopped
  • 3
    carrots, sliced
  • SWEET POPPY SEED DRESSING
  • 1 c
    sugar
  • 1 1/2 tsp
    dry mustard
  • 1 1/2 tsp
    salt
  • 1/2 c
    apple cider vinegar
  • 1 Tbsp
    onion juice
  • 1 c
    salad oil
  • 1 1/2 tsp
    poppy seeds

How To Make confetti spaghetti

    Boil Spaghetti noodles until done, but firm. Drain, cool by covering with cold water. Drain.

    Add chopped vegetables and enough dressing to coat noodles. Stir.

    To make Poppy Seed Dressing, combine sugar, mustard, salt and vinegar in the top of a double boiler. Heat over hot water until sugar is dissolved. Put into blender and slowly blend in onion juice and salad oil. Add poppy seeds at the end.
