My uncle Clarence's potato salad has always been a FAMILY FAVORITE. So when he became a vegetarian, he took his recipe and made it healthy. The results is delicious The same old fashioned potato salad taste, but no cholesterol. ENJOY

Ingredients For clarence's vegan potato salad

    baking potatoes boiled in jackets coold and diced
  • 1 md
    onion white or yellow diced fine
  • 4
    cascadian brand dill pickles or any healthy brand dill pickles
  • 14 oz
    jar pimentos drained and diced
  • 2 Tbsp
    prepared mustard
  • 1/2 c
    dill pickle juice
  • 1/3 c
    vinegar
  • 1/2 c
    nasoya creamy dressing or a healthy eggless mayonnaise type dressing
  • 1/4 c
    approx. . braggs liquid aminos in place of salt
  • dash or two of cayenne pepper ( optional )

How To Make clarence's vegan potato salad

    Mix all ingredients in a extra large mixing bowl.
