Ingredients For cauliflower "potato" salad (version #1)

1 headcauliflower, fresh (or i used 2 - 12 oz. bags frozen florets, thawed)

3green onions, sliced thinly (use both green & white parts)

3hard boiled eggs

3 Tbspdill pickle relish

1/2 cmayonnaise

2 Tbsplemon juice
-
1 tspdry mustard
-
salt & pepper, to taste
How To Make cauliflower "potato" salad (version #1)

1Cook cauliflower in boiling water until very tender, about 30 minutes. Drain thoroughly in a colander and allow to dry.

2Chop the egg & green onions; set aside.

3In a large bowl, add the mayo, lemon juice & mustard; mix together thoroughly.

4Add the cauliflower, green onion, egg & dill pickle relish. Gently stir to coat the cauliflower, taste & season to taste with salt & pepper.

5Chill for at least 30 minutes before serving to let the flavors marry.
