My co-worker at the Star, Carrie Parker, brought this yummy potato salad to our office Christmas party and it was a huge hit. It is so easy and doesn't require hours of chopping as so many potato salads do. Photo by: nutmegnanny.com

Ingredients For carrie's easy potato salad

  • 2 lb
    red potatoes
  • 2 c
    shredded sharp cheddar cheese
  • 1 bottle
    ranch dressing
  • 1 pkg
    (3 oz.) real bacon bits

How To Make carrie's easy potato salad

    Peel and cube potatoes (or leave skin on if you prefer). In a large saucepan, boil potatoes until done, about 15 minutes. Remove from heat and drain and rinse in cold water. Set aside to cool for a few minutes.

    Put cooked potatoes into a large serving bowl. Add the cheese, ranch dressing and bacon bits. Mix thoroughly. Chill in refrigerator for at least 1 hour. Serve.
