Callaloo is a name for a leafy plant and a dish popular in the West Indies. It has West African roots. In the Bahamas, it is served like this. (If you have amaranth leaves available, use them - in the midwestern US, I use spinach!)

Ingredients For callaloo salad

1 lbcallaloo or fresh spinach

6 smpotatoes, boiled, peeled,and sliced

6 slicecheese (of your choice)

1/2 cmayonnaise

1squeeze of lime juice
How To Make callaloo salad

1Plunge callaloo or spinach in boiling water for 3 minutes. Drain and chop.

2Mix with cold sliced potatoes and cheese.

3Dress with mayonnaise/lime juice mixture.
