Ingredients For black forest potato salad

1 lbpotatoes, unpeeled and diced

1/4 cgreen onions, sliced

10 ozsauerkraut, rinsed and squeezed dry

1 lbpolish sausage, sliced 1/2 inch thick

1 cred apples, tart, diced

2 tsppepper
-
2 Tbspwater
-
2 Tbspvegetable oil

1/3 ccider vinegar

1/4 cparsley, chopped
How To Make black forest potato salad

1In 2-quart saucepan over medium heat, cook potatoes, covered, in 2 inches boiling water until tender, about 12 minutes; drain.

2Meanwhile, in large bowl whisk together vinegar, oil, water and pepper.

3Mix in apples.

4In large nonstick skillet over medium heat, toss and brown sausage 10 minutes. Remove with slotted spoon. Drain on paper towels.

5Add potatoes, sauerkraut, onions, parsley and sausage to apple mixture; toss gently. Season with salt.
