Potaots are a staple in our house, always have it on hand. Never kow when you need potato salad...You can serve it hot also.

Ingredients For bacon and potato salad

2 lbred potatoes -- unpeeled

3green onions, chopped
-
1/2 lbbacon, cooked and crumbled

1green bell pepper, diced
-
1hard-boiled egg -- chopped

1/2 csour cream
-
1/4 cmilk
-
3 Tbspfresh dill, chopped

1 Tbsplemon juice
-
2 tspdijon mustard
-
1/2 tspsalt
How To Make bacon and potato salad

1Slice potatoes into 1/4-inch-thick slices; place in a large saucepan; add water to cover. Bring to a boil; cover, reduce heat, and simmer 15 minutes. Drain. Combine potato, green onions, and next 3 ingredients in a bowl; toss gently. Combine sour cream and remaining 5 ingredients in a small bowl; stir well. Pour dressing over potato mixture; toss gently. Cover and chill.
