Ingredients For amish potato salad

1 lbpotatoes, peeled and cubed

1carrot, peeled and grated

2hard boiled eggs, chopped

1rib celery, chopped

1/2 cchopped onion

1/3 cmayonnaise

1 Tbspyellow mustard

1 Tbspwhite distilled vinegar

1 tspsugar

1/4 tspsmoked paprika

1/4 tspsalt
How To Make amish potato salad

1Bring a large pot of water to a rolling boil. Once boiling, add the potatoes. Cook until soft but not overdone, roughly 10-12 minutes. Drain and cool 15 minutes.

2In a large bowl, add the potatoes, carrots, eggs, celery, and onion.

3In another bowl, whisk together the mayonnaise, mustard, vinegar, sugar, paprika, and salt. Pour over the potato mixture and stir together.

4Refrigerate at least 1 hour before serving. Dust with paprika before serving, if desired.
