4-h fair potato salad

This potato salad recipe is the only one for me. During our 4-H Fair, I try to make sure I eat it 2 or 3 times. I think the key for me is probably the shredded potatoes...much better than cold chunks!

Ingredients For 4-h fair potato salad

  • 1 c
    miracle whip
  • 1/2 c
    half & half
  • 2 Tbsp
    yellow mustard
  • 1/4 c
    pickle relish, sweet
  • 1/4 c
    sugar
  • 2 1/2 tsp
    salt
  • 2 Tbsp
    vinegar
  • 2 1/2 lb
    (8 med.) cooked potatoes, shredded
  • 3
    chopped hard boiled eggs
  • 1 c
    chopped celery
  • 1/2 c
    chopped onions
