Ingredients For zucchini bow tie salad

  • 1/2 lb
    bow tie pasta
  • 2
    med size zucchini
  • 1/2 jar
    sun dried tomatoes in olive oil
  • 1/2 c
    fresh lemon juice
  • 1 tsp
    lemon zest, grated
  • 1/2 tsp
    garlic salt
  • 1/2 tsp
    salt
  • 1/2 tsp
    fresh ground pepper
  • 1/2 c
    olive oil
  • 4
    basil, fresh leaves

How To Make zucchini bow tie salad

    Slice your zucchini skin on and place in bowl with tablespoon of olive oil, salt and pepper to taste then mix.

    Place on a cookie sheet and put into 350 degree oven for 15 minutes. Until soft and remove from oven.

    Cook pasta according to directions and drain.

    Add zucchini to pasta and mix gently.

    Open jar of sundried tomatoes and cut 1/2 the jar of tomatoes in half and add to the pasta. Pour about 1/4 of oil from jar into pasta.

    Add garlic salt,salt and pepper. Also add lemon zest and lemon juice and mix. Garnish with basil leaves. Refrigerate and Enjoy!
