zesty shrimp pasta salad

My husband wanted us to get some frozen baby shrimp for us to have a shrimp salad sometime this next week. I went ahead and made it up adding tomatoes, cucumbers, and a tangy dressing. I love It in the Ditalini pasta tubes!

Ingredients For zesty shrimp pasta salad

  • DRESSING
  • 1-1/2 c
    mayonnaise
  • 3 tsp
    ketchup
  • 2 tsp
    garlic parsley salt
  • 1 tsp
    salt
  • 3/4 c
    sugar
  • 3 tsp
    horseradish, optional
  • SALAD
  • 1 c
    quartered cucumber slices
  • 1/2 pt
    cherry tomatoes, cut in half
  • 1/2 md
    red onion, minced
  • 16 oz
    cooked frozen mini shrimp, thawed
  • 1-16 oz
    Ditalini pasta tubes

How To Make zesty shrimp pasta salad

    Add dressing ingredients to a large resealable bowl and mix well. Add cucumbers, tomatoes, and red onion and stir to combine.

    Rinse the thawed cooked shrimp and set aside. In a large pot, cook the pasta until al dente; drain and rinse under cold water until cold. Add into the bowl. Continue to stir until everything is coated well with the dressing.

    Chill for three hours or overnight. Serve and enjoy this makes quite a few servings.
