8 ozorzo pasta

1/3 colive oil

3 1/2 Tbsplemon juice

2 clovegarlic finely minced

1/8 tspsalt

1/4 tspfresh ground black pepper

1/4 cminced red onion

1 chalved grape tomatoes

1 cdiced cucumbers

1/4 cchopped peperoncinis

1/2 chalved kalamata olives

1/2 cchopped artichoke hearts

1/2 ccrumbled feta cheese

1/4 cchopped fresh parsley
How To Make greek orzo salad

1Cook the orzo per the box instructions for al dente pasta; drain well.

2In a small bowl whisk together the olive oil, lemon juice, minced garlic, salt and pepper.

3In a large bowl combine the red onion, tomatoes, cucumbers, peperoncinis, Kalamata olives, artichoke hearts, feta cheese, parsley and cooled orzo pasta. Drizzle with lemon vinaigrette and toss to coat.
