Basil is plentiful in the garden now and I love the way it pairs with the pungent-sweet flavor of balsamic vinegar. This is very good with grilled chicken but delicious all by itself. You could make this with any pasta that you have on hand. Enjoy!

- SALAD

8 ozspaghetti, broken into thirds

6 ozmozzarella cheese, diced (1 1/4 cup)

1 1/2 cdiced tomatoes

1/2 cdiced Vidalia onion
- DRESSING

1/4 colive oil, extra virgin

1/4 cbalsamic vinegar

5-6fresh basil leaves, chopped

1garlic clove, minced
-
1 tspsugar
-
1/4 tspItalian seasoning blend

1/4 tspsalt

freshly ground black pepper to taste
How To Make spaghetti salad with balsamic and basil dressing

1Cook pasta to desired doneness as directed on the package.

2Drain and rinse with cold water.

3In a bowl, combine cooked and cooled pasta with the remaining salad ingredients.

4In a small jar with lid, combine dressing ingredients. Shake well.

5Pour over salad and toss to coat. Chill for 8 hours or overnight.
