After seeing Sharon Coyler's "SALMON MACARONI SALAD" posted on JAP. It inspired me to do my own rendition of the recipe. With canned salmon, pasta shells, cucumbers,green onions,peas and cooked eggs. Now I get to use to use my very first home grown cucumber! Naturally I had to add, to the recipe horseradish sauce !! You should know me by now! LOL Nancy.. 7/17/13

Ingredients For salmon & shells salad

  • 4- md
    eggs, hard boiled
  • 2 md
    cucumbers
  • 4-6 sm
    green onions
  • 2 lg
    celery ribs
  • 1 can
    salmon, canned
  • 1-1/2 c
    cooked pasta ( sm. shells)
  • 2 Tbsp
    mayonnaise
  • 1 Tbsp
    yogurt, plain
  • 1-2 Tbsp
    horseradish sauce- (you know me!) ha!
  • 1/2to3/4 c
    fresh cooked peas

How To Make salmon & shells salad

    Hard boil eggs...cool Pre-cook peas. Cool. Clean green onions, and celery. Slice thinly & set aside.

    Peel cucumber, cut and dice up. Set aside.

    Drain can of salmon, prepare salmon ready to add to salad. Set aside.

    Cook pasta shells, according to package directions, for a salad. Drain add a little oil, one to two tablespoons, mix.and cool.

    Mix mayo, yogurt, and horseradish sauce ...to your taste. Add veggies and cooked peas to cool pasta, then the dressing. Mix. Add salmon, toss gently.

    Pile all into a pretty bowl. Top with cooked eggs. Cover and keep cool till serving time.
