Ingredients For salad olympia

  • 7 oz
    pkg. elbow macaroni
  • 4 qt
    boiling water
  • 1/4 c
    Italian dressing
  • 1 Tbsp
    salt
  • 1 can
    Italian green beans, drained and cut, 16 oz
  • 1 c
    artichoke hearts, drained and halved, 14 oz
  • 1 1/2 c
    carrots, sliced
  • 3/4 c
    ripe olives, sliced
  • 1/2 c
    radishes, sliced
  • 1 c
    green pepper, chopped
  • 1/4 c
    green onion, chopped
  • 1 c
    Italian dressing
  • 1/3 c
    mayonnaise
  • 1 c
    provolone(4 oz) or mozzarella cheese, shredded
  • anchovies
  • tomato wedges
  • ripe olives

How To Make salad olympia

  • 1
    Cook macaroni in 4 quarts boiling water, the 1/4 cup Italian dressing and salt til tender, yet firm, about 10 minutes. Drain. Marinate cooked macaroni, green beans, artichoke hearts, carrots, sliced olives, radishes, green pepper and green onion in 1 cup Italian dressing for 2 hours, turning frequently,. Add mayonnaise and cheese and chill til ready to serve. Garnish with anchovies, tomato wedges or ripe olives.
