Ingredients For roasted winter vegetable pasta salad

1 1/2 crutabaga, peeled and cut into 1/2-inch cubes

1 1/2 ccarrots, peeled and cut into 1/2-inch cubes

1 1/2 ccelery root (aka celeriac), peeled and cut into 1/2-inch cubes
-
1/4 ccanola oil
-
1 tspdried rosemary
-
1 tspdried basil leaves
-
1 tspsmoked paprika
-
1/2 tspgarlic powder
-
1/2 tspground Himalayan pink salt, or to taste
-
1/2 tspfreshly ground black pepper, or to taste (I always use mixed peppercorns)

1 Tbspfreshly squeezed lemon juice, plus more to coat the apple cubes

1/2 tsplemon zest
-
1 lbtri-color rotini pasta, cooked according to package directions

3/4 ccherry tomatoes, halved
-
1 lggranny smith, cored, peeled and cubed
-
1/3 cred onions, finely chopped, soaked and drained
-
1/3 cwalnuts, toasted and roughly chopped
-
1 1/4 cFeta cheese, cubed into 1/4-inch pieces
-
4 Tbspfinely chopped parsley, for garnish
How To Make roasted winter vegetable pasta salad

1Preheat oven to 425ºF and line a large baking sheet with greased foil; set aside.

2In a large bowl, add rutabaga, carrot, and celery root cubes. Pour in oil and toss to coat. Add rosemary, basil leaves, smoked paprika, garlic powder, salt, and pepper; stir well.

3Spread vegetables out on a prepared baking sheet in a single layer. Transfer to the preheated oven and bake for 30 to 40 minutes or until tender, flipping halfway through.

4Remove from the heat and return roasted vegetables to the large bowl. Pour in lemon juice and add lemon zest; toss to coat and set aside to cool off a little, about 10 minutes.

5In a large salad bowl, combine cooked pasta, roasted vegetable mixture, tomatoes, apple, onions, walnuts, and cheese; toss until well mixed. When serving, add vinaigrette and sprinkle on some parsley.
