quick & easy macaroni salad

My favorite macaroni salad growing up was from the deli in a G.C. Murphy back in the 50's and 60's. When the deli closed, my mom found a recipe which closely reminded me of the deli's. Tried to duplicate my mother's recipe where she actually made her own mayonnaise, but being a working mother, time restraints did not allow it. So I tried different shortcuts and this one seems to work. My family loves this one and I am asked to bring it to every picnic/party/cookout we go to. I get a lot of compliments on this recipe, so I thought I would share.

Ingredients For quick & easy macaroni salad

16 ozpasta (any shape you enjoy will do)

1 lgvidalia onion, chopped

6 stalkcelery, chopped
-
8 ozsweet & sour dressing (i prefer marzetti's)

1 1/2 Tbspyellow mustard

1 to 2 cmayonnaise depending how moist you like your salad

6hard boiled eggs, chopped
How To Make quick & easy macaroni salad

1While hard-boiling the eggs, chop the celery and onions.

2In a bowl, mix the celery, onions, sweet and sour dressing and mustard. Put in refrigerator to let the flavors meld.

3Cook the pasta in salted water per package directions. Be sure not to overcook.

4Drain pasta and run under cold water to stop cooking process.

5Add to celery/onion mixture and let absorb flavors for a few minutes.

6Add enough mayonnaise to get the consistency you prefer and the hard-boiled eggs. Chill until ready to serve.

7If you want to make a low calorie version, both the dressing are in fat-free varieties.
