I found this recipe online at recipegoldmine.com This salad is delicious! I made it for my husbands work BBQ and everyone loved it! I made Emerils balsamic vinaigrette because of how easy and tasty it is but feel free to use your fav!

Ingredients For pesto tortellini salad with balsamic vinaigrette

  • 1
    20oz pkg refrigerated mixed cheese tortellini
  • 1 c
    (8oz) pesto sauce
  • 1/2 c
    prepared balsamic vinaigrette dressing (recipe i used follows)
  • 1/2 c
    drained and chopped oil packed sun-dried tomatoes
  • 3 sm
    sprigs green onions, finely chopped (white part and part of the green)
  • 1/2 c
    toasted pine nuts or walnuts,chopped
  • EMERILS EASY BALSAMIC DRESSING
  • 1/4 c
    balsamic vinegar
  • 2 tsp
    brown sugar
  • 2 clove
    garlic, minced
  • salt and pepper to taste
  • 1/2 c
    olive oil

How To Make pesto tortellini salad with balsamic vinaigrette

    Cook tortellini as directed on package and allow to cool.

    In a medium bowl combine all ingredients and toss to combine. Chill for at least 1 hour or overnight.

    FOR THE DRESSING-- In a small bowl combine vinegar, sugar, and garlic. Whisk consistently and slowly add the olive oil until well combined. Add salt and pepper to taste. Chill in an airtight container until ready to use.
