I used to make this for the salad bar at a restaurant I worked in. Well received. I don't know how many it serves, as I made the recipe up myself & it was on a salad bar. It is my own concoction.

Ingredients For peggi's tortellini salad

1 pkgfrozen, 3 cheese tortelleni,thawed

1 bottlecreamy italian dressing (buy larger bottle)

1/2 cfresh grated parmesan cheese
-
1/2green bell pepper, chopped fine
-
1/2red bell pepper, chopped fine
-
1/2 cgreen onions, chopped
-
salt & pepper to taste
-
1/2 pkgsliced pepperoni (may use more)
-
1 csliced black olives
-
1/2 csun dried tomatoes ( in bag)
How To Make peggi's tortellini salad

1Thaw Tortelleni noodles. Do not cook. Add all remaining ingredients, using only as much of the salad dressing as needed to coat the salad but not be swimming in dressing. Salt & pepper to taste. Refrigerate at least 4 hours for full flavor, preferably 3 days or more for the best flavor.
