Ingredients For pasta salad with roasted peppers

16 ozdry pasta, your favorite

8 ozmexican creama, or sour cream
-
1 pkgdry ranch dressing mix

1poblano
-
1red bell pepper
-
1/4 csweet onion
-
3 slicebacon
-
3hard boiled eggs

1 ccheddar cheese, grated

salt and pepper to taste
How To Make pasta salad with roasted peppers

1Cook bacon till crisp, let cool and crumble. Hard boil eggs, peel and dice. Grate cheese.

2Roast peppers in 350° oven for 1 hr. Remove skin and dice, finely dice onion as well. Boil pasta according to package directions for al dente. Drain.

3Mix sour cream and Ranch dressing mix together, mix well into pasta. Add remaining ingredients. Refrigerate until serving.
