Ingredients For pasta salad w garlic & olive oil marinated tomato

  • 3 clove
    garlic sliced
  • 1/4 c
    olive oil
  • 8 oz
    cherry tomatoes halved
  • 1/2 c
    fresh basil chopped
  • 1/4 c
    fresh pea shoots
  • 2 Tbsp
    capers drained
  • 2 tsp
    lemon juice
  • 1 tsp
    grated lemon zest
  • 1/2 tsp
    salt
  • 8 oz
    angel hair pasta
  • 4 oz
    fresh mozzarella torn into pieces
  • freshly cracked black pepper

How To Make pasta salad w garlic & olive oil marinated tomato

    Place the olive oil in a small saucepan. Add the garlic chips and cook over med high heat until garlic is browned. Remove from heat and let cool.

    Place the tomatoes, basil, capers, pea shoots, lemon juice, lemon zest, and salt. Strain the oil over the tomato mixture. Discard the garlic sliced. mix well and let marinate for 30 minutes.

    Meanwhile cook the angel hair in boiling salted water. Drain and rinse in cold water. Once cold add the pasta to the tomato mixture. Add the mozzarella pieces and stir all together. Top with cracked pepper.
