Ingredients For pasta salad - greek-style
- DRESSING

3 Tbspwhite vinegar (or red/white wine vinegar)

1 Tbspolive oil

1/4 cchopped fresh basil (or 2 tsp. dried)

2 Tbspchopped green onions

2 Tbspgrated parmesan cheese

1/2 tspsalt
-
1/4 tspblack pepper
-
1/4 tspdried oregano
- SALAD
-
3 cuncooked rainbow rotini (spiral pasta)

1 mdred or green bell pepper, cut into 1/4 inch strips (can use two different color peppers if you wish)

1 mdtomato, cut into wedges

6 ozfeta cheese, crumbled (1 1/4 cups)

additional ingredients if you wish: olives, artichoke hearts, red onion or anything you wish to add
How To Make pasta salad - greek-style

1In a jar with a tight-fitting lid, combine all dressing ingredients; shake well. Set aside.

2Cook rotini to desired doneness as directed on package. Drain; rinse with cold water.

3In a large bowl, combine cooked rotini and remaining salad ingredients. Pour dressing over salad; toss gently to coat. Serve immediately
