This recipe has to be delicious, just by the ingredients, it is delicious looking with delightful presentation too, so I adopted it here on Just a Pinch; trying it out today!

Ingredients For orzo spinach salad

  • 1 lb
    orzo pasta
  • salt to taste
  • juice from 1 lemon
  • 1/4 c
    pine nuts
  • 1 c
    mixed dried fruit
  • 3/4 c
    feta cheese
  • 2 c
    fresh spinach
  • 1/4 c
    olive oil
  • 3 Tbsp
    olive oil
  • pepper to taste

How To Make orzo spinach salad

  • 1
    Cook orzo until tender.
  • 2
    Drain pasta then toss with the 3 tablespoons olive oil.

    Spread on jelly roll pan and let sit until cool.

    Once it is cool place in a large bowl and mix with remaining ingredients. Enjoy.
