Ingredients For orzo pasta salad
- SALAD DRESSING

1/3 colive oil

2 Tbspwhite wine vinegar

1 Tbsplemon juice

2 clove2 cloves minced garlic

2 tsphoney

1 tspmustard

salt and pepper to taste
- ORZO PASTA SALAD
-
1 ½ corzo pasta
-
½english cucumber diced
-
1 chalved grape tomatoes or cherry tomatoes

2/3 cchopped artichoke hearts
-
1/3 cthin sliced red onion
-
1block feta cubed or crumbled
-
1/4 cchopped fresh basil, mint, or parsley (or combination)

salt and pepper to taste
How To Make orzo pasta salad

1Put a large pot of water on the stove to boil. Cook the orzo slightly al dente according to package directions. Rinse under cold water and drain well.

2Add the olive oil, white wine vinegar, lemon juice, garlic, honey, and Dijon mustard to a mason jar with a tight-fitting lid and shake to combine. Season with kosher salt and black pepper to taste.

3Once the orzo pasta fully cools add it to a large bowl with the cucumbers, grape tomatoes, artichoke hearts, red onion, and feta cheese.

4Shake the dressing again and drizzle over the pasta salad. Toss the pasta salad to combine. Sprinkle with fresh herbs and gently toss again.
