This salad has been a great hit at every Pot Luck I have ever taken it to. It is fast and easy. Enjoy!

Ingredients For penne pasta salad with cucumber dressing

  • 3/4 c
    vinegar
  • 3/4 c
    sugar
  • 1
    cucumber ( peeled )
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/2 tsp
    garlic salt
  • 3/4 Tbsp
    regular mustard
  • 1/2 Tbsp
    dry mustard
  • 1/4 c
    cilantro or chives
  • 1 bunch
    green onions
  • 1 pkg
    penne pasta

How To Make penne pasta salad with cucumber dressing

    Blend all ingredients in blender EXCEPT pasta.

    Cook pasta according to directions. Rince and drain twice in cold water.

    Stir a small amount of salad oil in pasta to coat. Add liquid to pasta and let stand overnight or at least 3 hours.
