we had this as a kid made from the cheap ole boxes of mac and cheese withh whatever veggies came out of the garden...today i make homemade mac and cheese for it... mac and cheese i use has extra sharp cheddar,swiss and parm in it and for the veggies use what ya like/have on hand.. what i have listed are what i use.... this is a great side dish with my pineapple/garlic chicken

Ingredients For mac and cheese salad

  • 1
    recipe of yur fav mac and cheese[best with sharp cheeses]
  • 1 pkg
    [1 lb].. frozen brocolli flowerettes
  • 1 pkg
    [8 oz] baby portabella mushrooms
  • 1 md
    white onion,chopped
  • 1/2 lb
    smoked ham,cubed
  • 1/4 c
    fresh celery leaves,chopped fine-divided
  • 1 pt
    cherry tomatoes...1/2ed
  • 4 lg
    hard boiled eggs
  • 1 pt
    light sour cream
  • 1 1/2 Tbsp
    liquid smoke flavoring
  • iceburg lettuce leaves... one per serving

How To Make mac and cheese salad

    make mac and cheese [drop frozen brocolli in pasta last 6 min of cookin] put in lg bowl cover put in fridge
  • 2
    saute mushrooms in lg fry pan add onion and most of celery[save a bit to sprinkle on top]cook til onion is bout carmalized..then add ham and heat/cook jus til a little color is added.. cool while ya make dressing

    add liquid smoke to sour cream[add salt and pepper if ya want i don't]

    take mac and cheese from fridge add cooked veggies,3 of the boiled eggs-chopped,and the tomatoes[save a couple tomatoes as garnish

    add dressing toss lighty 1/2 last egg put on top put last couple tomatoes on top sprinkle with last of celery cover put in fridge til very cold[several hrs or overnight]

    to serve put a scoop of salad into iceburg lettuce leaves and enjoy
