Once again my husband combined a couple of recipes to come up with this wonderful salad. Whenever the volunteer fire department has an event, my husband is always asked to bring the macaroni salad. I have to admit it, this salad is better than my mom's or even my grandma's! You have to try this!

Ingredients For lori's famous macaroni salad

  • 16 oz
    uncooked small salad shell macaroni
  • 2
    large cucumbers - diced
  • 1/2
    large onion - diced
  • 2 c
    mayonnaise
  • 1 can
    14 oz sweetened condensed milk
  • 1/2 c
    white sugar
  • 1/2 c
    white vinegar
  • 4
    roma tomatoes - diced

How To Make lori's famous macaroni salad

    Bring a large pot of water to a boil. Add macaroni, and cook until tender. Rinse under cold water and drain.

    In a large bowl, stir together the onion, cucumber and tomatoes. Mix in the mayonnaise, condensed milk, sugar and vinegar. Add the macaroni, toss gently, cover and refrigerate for at least 8 hours. We usually make this a day ahead of time. Stir occasionally. The macaroni will absorb some of the liquid.
