Ingredients For lemongrass vermicelli salad
- LEMONGRASS DRESSING

2 Tbsplemongrass paste or freshly grated lemongrass

3 clovegarlic minced

1/4 ceach fish sauce, vegetable oil, and lime juice

2 Tbsprice vinegar

4 Tbspbrown sugar

2 Tbsproasted red chili paste
- VERMICELLI SALAD

8 ozvermicelli rice noodles

2 mdcarrots julienne cut
-
1cucumber julienne cut
-
fresh cilantro chopped

handful of crushed peanuts

protein of choice i used chicken cooked
How To Make lemongrass vermicelli salad

1Mix the ingredients for the dressing together and set aside.

2Cook the vermicelli noodles and drain run cold water over them to let them cool down. Toss with half of the dressing.

3Place the noodle on a plate and top with the rest of the ingredients. Drizzle remaining dressing over the salad
