My husband and I enjoy experimenting with foods we've tasted in other places. Pasta salads were just beginning to pop up in our area, so we decided to try our hand at them. We both like different ingredients, so sometimes we make it with the ingredients we both like, then we each add our favorite ingredients to our own pasta salad. This is the recipe we always take to the church pot luck. I double the recipe and hope I get some before it's all gone! We've never had leftovers to take home. I've shared it with several of the ladies (and men!) at the church.

Ingredients For jerry and robin's favorite pasta salad

1 large pkgtortellini, cheese stuffed

1/4 cnewman's own olive oil and vinegar or light balsamic vinegar dressing

1 tspcapers (he likes the big ones and i like the little ones!)

1 small bottlesliced mushrooms
-
1/2 ccherry tomatoes, halved
-
1 Tbspsliced or chopped ripe olives (jerry's ingredient)
-
3marinated and quartered artichoke hearts (robin's ingredient)

2 Tbspgrated parmesan cheese
-
2 clovepressed garlic (or 1/2 to 1 tsp bottled minced garlic)
-
1 mdripe avocado, sliced or chunked

seasoned salt and seasoned pepper to taste
How To Make jerry and robin's favorite pasta salad

1Cook pasta according to package directions. Drain well and cool.

2Add all other ingredients (all are optional and amounts can be adjusted to taste.)

3Toss well and serve cool, but not chilled.

4To balance out the salad to use as a meal, add slices/chunks of rotisserie chicken from the supermarket.
