This makes a great summertime lunch, or anytime lunch. Meat, pasta, veggies--what more could you ask for? Found this in my old, old recipe file. I don't think I made it more than once or twice because my son wouldn't eat anything with tomatoes in those days. Photo source: livedan330.com

Ingredients For fiesta stuffed tomatoes

1 box(7-1/4 oz.) kraft mac & cheese dinner

1 can(5 oz.) chunk chicken
-
1/2 cmayonnaise
-
1/2 ccelery, sliced
-
1/4 cgreen onions, sliced
-
4 lgtomatoes
-
4 lglettuce leaves
-
fritos or doritos
How To Make fiesta stuffed tomatoes

1Prepare the mac & cheese dinner as directed on package; drain.

2Add chicken, mayo, celery and onion. Mix lightly and chill for about 2 hours.

3Add more mayo before serving, if needed.

4Cut each tomato in six sections, almost to the stem end. Fill with mixture. Serve on lettuce leaves, surrounded by chips.
