Give me a word, any word and I will show you how it is Greek...LOL! Great quote from a good movie but this isn't a movie, but a recipe I created for a Greek pasta salad with an easy homemade dressing.

Ingredients For farfalle of arete (greek pasta salad)
- GREEK DRESSING

1/2 csour cream
-
1/4 cmayonnaise

4 tspcavender's all purpose greek seasoning

1/8 cbalsamic vinegar

1/4 capple cider vinegar
-
2 tspgranulated garlic or garlic powder

2 Tbsphoney
-
2 Tbsptahini
-
3 tspolive oil
-
1/4 tspsalt
-
1 tspdried oregano
-
1 tspdried basil
-
1/4 cgrated parmesan cheese
- SALAD
-
1 lbfarfalle (bow tie) pasta

12 ozmarinated artichoke hearts, diced
-
2 canlarge pitted black olives, halfed
-
12 ozfeta cheese, crumbled
-
16 ozbaby spinach
-
2 ptgrape tomatoes, halfed
-
2 ptmushrooms, quartered
-
6 ozsun dried tomatoes, chopped
-
1 lgpurple onion, sliced thin

1 lgenglish cucumbers, seeded and diced

2 lgred peppers, sliced
-
1 tspfresh mint, chopped
How To Make farfalle of arete (greek pasta salad)

1FOR DRESSING: Combine all ingredients and whisk together. Taste for salt and pepper and adjust as needed. This will make a lot of dressing, so don't just pour it over the salad.

2Cook, drain, and cool pasta.

3Add pasta, spinach, and all other vegetables and cheese to a large bowl. Toss to combine ingredients evenly.

4Add dressing, about a half cup and toss. This is where you decide how much or how little dressing you desire.

5You could add grilled chicken, grilled shrimp, or grilled tenderloin to make this a main dish. This is a very cool dish for those hot summer days.
