I've had a salad simular to this many times at Brines Market and Deli...sooo yummy!

Ingredients For pasta taco salad

  • 1 lb
    rotini pasta
  • 1 lb
    ground beef (shredded chicken or ground works as well)
  • 1 pkg
    taco seasoning mix
  • 2/3 c
    water
  • 2 c
    tomatoes, diced (i like to use halved grape tomatoes)
  • 1 c
    onion, diced
  • 2 c
    cheddar cheese (its great with fiesta blend shredded cheese too)
  • 1 - 15.5 oz
    can black beans or kidney beans, drained and rinsed
  • 1 c
    western salad dressing (tastes great with the lite)
  • 1 c
    mayonnaise

How To Make pasta taco salad

    Pasta: prepare pasta according to package directions. Drain. Rinse with cold water; set aside.

    Beef: In a large skillet, brown beef, drain excess grease. Stir in taco seasoning and water, bring to a boil, reduce heat and simmer for 3-4 minutes or until liquid has absorbed. Set aside until meat is cooled.

    Salad: Toss together cooled meat, pasta, tomatoes, onion, cheese and beans. Mix dressing and mayo together and stir into pasta mixture. Enjoy!
