This is a different twist to macaroni salad that is delicious and a smart way to use up that left-over corned beef from St Patrick's Day.

Ingredients For corned beef and macaroni salad

  • 1 1/2 c
    corned beef
  • 2 c
    elbow macaroni, cooked
  • 1/2 c
    celery, chopped
  • 1/4 c
    sweet relish
  • 1 tsp
    sugar
  • 1/2 c
    mayonnaise
  • 1/4 c
    red bell pepper, chopped
  • 1/4 c
    green bell pepper, chopped
  • salt and pepper, to taste
  • 1/8 c
    onions, chopped (optional)

How To Make corned beef and macaroni salad

    Cut beef into small cubes.
  • 2
    Cook macaroni in boiling salted water for about 20 minutes. Drain and rinse with cold water.

    In a medium size bowl combine mayonnaise, relish, beef, vegetables, and salt and pepper. Chill and serve.
