Ingredients For cold soba noodle salad

1 Tbspvegetable oil

1 Tbspsesame oil

1 clovegarlic, minced

1 Tbsptamari
-
2 Tbspsweet chile paste

1/2 tspred chili flakes
-
1/3 cpeanut butter
-
2 Tbspfresh lime juice

1 tspfresh lime zest
- SALAD INGREDIENTS

4 cthinly sliced cabbage
-
1 1/2 csnow peas or long beans (cut)
-
4 Tbspvegetable oil
-
2 cbean sprouts
-
4radishes, sliced thin
-
1red bell pepper, cut into thin strips
-
2scallions, sliced fine
-
1 lbsoba noodles
-
1/8 csesame seeds, toasted
-
1/8 ccilantro, chopped
-
1/4 cchopped peanuts
How To Make cold soba noodle salad
-
1In a small mixing bowl combine the first 9 ingredients.

2Whisk well and set aside.

3Bring a pot of water to a rolling boil.

4Add Soba Noodles and cook according to directions.

5Drain, rinse and set aside. (I toss mine with 1 teaspoon of sesame oil to keep them from glopping together-up to you)

6In a wok or large skillet heat the 4 tablespoons of vegetable oil over high heat.

7Add the cabbage and snow peas or cut long beans.

8Toss the cabbage and snow peas constantly until cabbage is wilted and snow peas are bright green-around 4 minutes.

9Remove cabbage mixture from heat and pour into a large serving bowl.

10Add cooked soba noodles and toss well.

11Add the bean sprouts, sliced radish, sliced red bell pepper, sliced scallions and toss well.

12Add dressing and toss well.

13Add toasted sesame seeds and cilantro and toss well.

14Sprinkle chopped peanuts on top and serve.
