This recipe was given to me by a friend who knew how much I loved artichokes. Its easy and delicious.

Ingredients For artichoke pasta salad

  • 1 lb
    uncooked pasta, your favorite shape (spirals, shells, etc)
  • 1 md
    head of broccoli, cut into bite sized pieces
  • 1 sm
    red bell pepper, sliced into thin strips
  • 1 sm
    yellow bell pepper, sliced into thin strips
  • 1 sm
    sweet red onion, sliced thin
  • 2 jar
    (6 1/2 ounces) marinated artichokes, drain and reserve liquid
  • 1/2 c
    shredded romano cheese (or parmesan)
  • sea salt and freshly ground black pepper to taste
  • 1 pinch
    red pepper flakes, optional

How To Make artichoke pasta salad

  • 1
    Cook pasta according to package directions. Add cut broccoli during the last 3 minutes of cooking time. Drain and rinse with cold water. In a large bowlmix all ingredients, adding as much of the artichoke marinade as you like. Season to taste. Chill for 3-4 hours to blend flavors before serving. Best served cold.
