Feel free to use the pasta of your choice. The wagon wheels sometimes entices kids to eat this pasta salad they might otherwise not try. LOL. Prep time includes 1 hour of chilling time.

Ingredients For "anything goes" pasta salad

16 ozpackage wagon wheel macaroni (may sub shells or elbow)

1/4 colive oil
-
salt, to taste
-
pepper, to taste

2 canartichoke hearts, drained and halved (14 oz cans)

1/2 croasted red pepper strips
-
3 ozjar capers, drained
-
6-8sun-dried tomatoes, cut into strips
-
1/2 cparmesan cheese, grated
-
1/3 cfresh italian parsley, chopped
-
3 clovegarlic, minced
-
3/4 colive oil
-
1/4 cwhite wine vinegar
-
1/4 cfresh lemon juice
-
1egg yolk
-
1 tspdry mustard
-
1 tspdried whole basil
-
1/4 tspsalt
-
1/8 tsppepper
-
1/4 tsphot sauce (optional)
-
1/2 cpine nuts, toasted
How To Make "anything goes" pasta salad

1Cook macaroni according to the package directions; drain. Place macaroni in a large bowl. Add 1/4 cup oil and salt and pepper to taste.

2Add artichoke hearts, roasted pepper, capers, tomato, cheese, and parsley; stir gently to combine. Set aside.

3Position knife blade in a food processor bowl. Add garlic, next 8 ingredients, and if desired, hot sauce, and process until smooth.

4Pour dressing over pasta mixture; toss well. Cover and marinate in the refrigerator for 1 hour. Sprinkle with pine nuts just before serving.
