Every region or nationality seems to have its own version of Macaroni Salad. It's interesting to see the small nuances of variations! I tweaked this one from a blog of Amish recipes. (Cooking time includes chilling of the completed salad before serving and also cooking the pasta and eggs. If the eggs and macaroni are cooked and chilled ahead, then total time would be less.)

Ingredients For amish style macaroni salad

2 celbow macaroni, dry - 4 cups cooked

2hard boiled eggs, chopped

3/4 conion, chopped

1 cgreen pepper, chopped (can mix green and red pepper)

1/2 ccelery, chopped

1 cmayonnaise

1 Tbspsugar
-
2 Tbspcider vinegar
-
1/2 tspcelery seed
-
1/2 tsponion powder
-
1/2 tspgarlic powder

1/2 tspsalt (or to taste)

1/4 tspground black pepper
How To Make amish style macaroni salad

1Cook the macaroni, drain and cool. Meanwhile. boil eggs, cool, shell and chop. Combine cooled macaroni, chopped eggs and veggies in a large bowl and set aside.

2In a small bowl, combine mayonnaise, sugar, salt and spices. Stir until smooth and pour into macaroni. Stir gently to combine. If salad seems too dry, add a little milk. Chill for an hour or more before serving.
