Here's yet another recipe from the same Amish cookbook! This is one of my favorite dishes, and it makes quite a bit; excellent for a group picnic or potluck!

Ingredients For amish macaroni salad

1 lbmacaroni (or baby seashells)

1 1/2 ccelery, chopped

1/2 ccarrots, finely grated

1/4 conion, finely chopped

6hard-cooked eggs, sliced

paprika, for garnish

1 ptsalad dressing (such as miracle whip)

1/4 cvinegar
-
3/4 csugar
-
2 Tbspprepared mustard
How To Make amish macaroni salad

1Cook macaroni as directed, drain and cool.

2Set aside 1 hard-cooked egg; then stir together gently the cooked macaroni, celery, carrots, onion and remaining eggs.

3For the dressing: Blend together salad dressing, vinegar sugar and mustard; fold into macaroni salad mixture.

4Garnish with 1 hard-cooked egg and paprika.
