Ingredients For zucchini coleslaw

  • 2 c
    zucchini, coarsely shredded
  • 2 c
    cabbage, shredded
  • 1 md
    carrot, shredded
  • 2
    green onions, sliced
  • 1/2 c
    radishes, thinly sliced
  • 1/3 c
    light mayonnaise
  • 1/3 c
    mild picante sauce
  • 1/2 tsp
    ground cumin

How To Make zucchini coleslaw

  • 1
    Drain zucchini by pressing between layers of paper towels.

    Place in a large bowl; add cabbage, carrot, onions and radishes.

    In a small bowl, combine remaining ingredients.

    Pour over vegetables and toss well.
  • 5
    Cover and chill at least 1 hour.
