This is sooooo good right after a trip to the farmers market. The veggies are so fresh with a taste you can only get seasonally. You can make a salad with any ingredients you want. I used Italian vinaigrette. The cheese gives it a creamy smoky flavor. MMM

2 lgtomatoes chopped

1 lgcucumber diced

1/2 cchopped red onion

assorted fresh herbs ie mint, cilantro, parsley, dill, basil

favorite vinaigrette dressing

8 ozyanni grilling cheese sliced 1/4 inch thick
How To Make yanni grilling cheese salad

1Take your block of Yanni cheese and cut in half horizontally so it's about 1/4 inch thick. Grill it on a grill pan or cast iron pan or a non stick pan. The cheese gets a crusty coating to it and doesn't melt all the way. Let the cheese cool down then cut into cubes

2Toss all the salad ingredients together add the cheese cubes and favorite vinaigrette
